Preheat oven to 400° (F). Spray muffin pan (2 1/2" diameter cups) with cooking spray. Fit a wrap into each cup (edges will ruffle). Lightly spray each wrap. Bake until golden brown (4 minutes). Cool shells. Combine filling ingredients; mix well. Combine filling mixture and dressing (recipe below). Toss to coat. Add filling in cooled cups. Garnish with parsley if desired.
Dressing - Lime Chili Fish Sauce
1/4 cup Thinly sliced peeled fresh ginger
1/4 cup Fresh lime or lemon juice
2 tbsp Thai fish sauce
1 tbsp Thinly sliced red bell pepper
1 tbsp Chopped seeded jalapeno chile
2 tbsp olive oil
Puree all ingredients in a blender. Let mixture stand at least 15 minutes to 1 hour. Strain mixture into small bowl, pressing on solids to release any liquid; discard solids.
