Peel and devein shrimp. Rinse with cold water. Bring a large pot of light salter water (5 quarts) to boil
Boil Peking Fresh Noodles al dente (6-7 minutes). Drain noodles and set aside.
Saute ginger and garlic in hot oil. Add broccoli, carrots, cilantro, green onions, shrimp, and vean sprouts; saute for 3-4 minutes. Drizzle soy sauce over mixture.
Remove from heat. Add sesame oil and ground pepper to shrimp and vegetables. Toss gently and serve over Peking Fresh Noodles. May garnish with chives and Fried Crispy Noodles. Serve immediately.
